Instant Pot Beef Tips Recipe
Lately there have been dozens of recipes for various dishes called Beef Tips. Apparently, beef tips are pieces of meat – originally cut from the tenderloin, but lately from other cuts – that aren’t big enough to sell as a roast, but are good for cooking, nonetheless. Beef tips can be sold as pieces of beef chuck, sirloin, tenderloin, or almost any cut of beef. Generally they are cut into cubes and cooked in sauces. The following Instant Pot Beef Tips is quick and easy, and the end result is delicious, tender beef chunks in a flavorful gravy that can be serve with rice or potatoes. I don’t use tenderloin in these beef tips because of the exorbitant price, as well as the fact that they are so tender, that they don’t need much time to cook. Instead, I cut up a chuck roast or use top sirloin – whatever I happen to have in my freezer. You can use any economical cut and it will end up very tender and tasty.

3 pounds sirloin tip steaks, or chuck tender steak, or chuck roast

1/4 cup flour
1 tablespoon seasoning salt, (your favorite kind)

2 tablespoons vegetable oil
1 cup red wine
1 tablespoon granular beef bouillon

1 large onion, chopped
1/2 pound sliced mushrooms (optional)
2 cups water
1 10 3/4 ounce can condensed cream of mushroom soup

  1. Trim the meat of fat and cut it into 1" chunks.
  2. Mix the flour and seasoning salt; toss with the meat chunks.
  3. Turn the Instant Pot to the sauté setting. Add the vegetable oil and let heat.
  4. Add the beef chunks and brown, stirring often. Remove the chunks from the pot, add the wine and bouillon, and let come to a boil.
  5. Scrape the crispy bits from the bottom and let the mixture boil until it is reduced by half.
  6. Turn off the Instant Pot, add the beef chunks, and top with the onions and mushrooms. Pour the water over all and stir in the soup.
  7. Cover the pot, set the valve to sealing, and set the pot to 30 minutes. When the cycle has finished, let the pressure release naturally.
  8. Serve over rice, noodles, or mashed potatoes.
